Caribbean Sea Bass with Mango Salsa

Here’s what you’ll need:

4 (4 ounces each) skinless sea bass fillets, about 1 inch thick

1 teaspoon Caribbean jerk seasoning

Nonstick cooking spray

1 ripe mango, peeled, pitted and diced or 1 cup of diced and drained bottled mango

2 tablespoons chopped fesh cilantro

2 teaspoons fresh lime juice

1 teaspoon minced fresh jalapeno pepper

Now, prepare the  grill or pre-heat the broiler. Sprinkle fish with seasoning, coating lightly with cooking spray.  Grill fish over medium coals or broil 5 inches from the heat for 4 to 5 minutes per side or until fish flakes easily with a fork.

Meanwhile, combine the mango, cilantro, lime juice and jalapeno pepper, mixing well. Spoon the mixture directly over fish.

Prep time is a quick 10 minutes

Cook time approxmately 8 minutes

Makes 4 servings.
